To celebrate National Cooking Day on September 25th, we’re sharing with you a prized recipe from Chef Rashpals ancestral kitchen…

Lamb Rogan Josh

Ingredients
500 gram Lamb Pieces
400 gram Chopped Tomatoes
100 gram Chopped Onions
1 table spoon Fresh Garlic Paste
1 table spoon Fresh Ginger Paste
1 Table spoon Tomato Paste
4 table spoon Vegetable Oil
4 Bay Leaves
1 small Cinnamon Sticks
4 small Green Cardamom
1 piece Star Aniseed
5 gram Whole White Cumin Seeds
1 tea spoon Garam Masala
1 ½ tea spoon Turmeric Powder
½ tea spoon Cumin Seed Powder
1/2/ tea spoon Coriander Powder

1 Tea Cup of Water
Salt & Chilli  to your taste

Method
Firstly add Vegetable oil into a pan. When the oil is warm add; white cumin seeds, Cinnamon sticks, Green cardamoms, Bay leaves & Star Aniseed.

Next add in the chopped onions and cook until golden brown. Add  in the the garlic and ginger paste and let this simmer for 5 minutes ensuring the garlic and ginger paste does not burn. Next, add in the the Lamb pieces and  cook for up to 25-30 minutes.

Add salt and turmeric powder and let this simmer for a further 5 minutes. Add in dd the chopped tomatoes and cook for a further 20 minutes.

Add tomato paste and  1 tea cup of water.

Finally add; garam masala, cumin seed powder, coriander powder.

Let this simmer for 15-20 minutes and your Lamb Rogan Josh dish is ready.

Garnish with:
Fine chopped coriander and fine long slices of ginger.
